Coffee Yogurt Pudding
This pudding is a tangy, yummy type of coffee flan or custard with a definitive pudding consistency. Tastes great either served hot, or allow to cool, refrigerate and serve cold.
This recipe makes 4 servings.
Coffee Yogurt Pudding Ingredients:
8 ounces of plain yogurt
3 1/2 ounces of whipping cream
2 tablespoons original blend coffee, pulverized to a powder
1 egg
4 egg yolks
3.5 ounces of sugar
1 tablespoon of coffee liqueur
1 teaspoon pure vanilla extract
Directions:
Preheat the oven to 320°F.
In a saucepan pour the whipping cream and add the yogurt and scald the mixture.
Add the pulverized coffee grounds and stir until they dissolve.
In a bowl, beat together the egg, egg yolks, and sugar until cream.
Slowly pour the hot cream mixture into the egg mixture, whisking constantly.
Add the liqueur and vanilla extract and stir well again.
Strain the mixture through a very fine sieve into a serving bowl or into four ramekins.
Place them in a pan then fill the pan with water to about half up the bowl or ramekins.
Bake for 30 minutes or until the pudding sets.
May be served hot or cold.
