Jewel of Fruit Pie
A delicious, low calorie dessert (with only 147 calories per slice) from The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr – this is guilt free indulgence at its best!
This recipe makes 4 servings.
Jewel of Fruit Pie Ingredients:
1 cup rolled oats
1 banana, sliced crosswise
1 pint strawberries, washed, hulled and sliced
1 Granny Smith apple, peeled, cored and sliced medium thin
½ teaspoon vanilla extract
1 pinch cinnamon
1 tablespoon date sugar
1 pinch nutmeg
¼ cup water
Instructions:
Preheat the oven to 350 degrees.
Grind ¾ cup of the oats in a food processor.
Pack firmly on the bottom of a 9”x9” Pyrex baking dish and bake for 2 minutes.
Let cool.
Grind the remaining ¼ cup of oats and mix with the remaining ingredients.
Pour the mixture very gently over the crust and bake for 30 minutes.
Cool and serve.
