Simple Grilled Turkey Breast

November 1, 2006

Forget the typical oven-baked sage-seasoned whole bird this year and go for this simple no-carving-necessary cutlet entrée that's flavorful, simple to make with absolutely no mess! Ideal for small families who love white meat only. We suggest turkey cutlets, precut from the butcher, but you can also use a 2 1/2 - 3 pound turkey breast and slice it yourself. The delicious marinade easily doubles!

Ingredients:
2 tablespoons brown sugar
2 tablespoons chili powder
1/4 cup corn or canola oil
2 tablespoons high-quality Modena balsamic vinegar
1/4 cup Dunkin' Donuts Original Blend coffee, brewed strong
1/4 cup ketchup
Salt to taste, about 1/4 teaspoon
Pepper to taste, about 1/4 teaspoon
12 turkey breast cutlets, about 4 ounces each (48 ounces total)

Directions:
In a medium size bowl combine all the ingredients except the turkey cutlets. Mix thoroughly so that the seasonings are well blended. Marinate the turkey cutlets in this mixture, covered, in the refrigerator for about two hours, or longer if your holiday schedule permits.

Preheat your grill.Remove the cutlets and place on a dish. Reserve the marinade that remains. Grill the cutlets on the preheated grill, over low heat, basting with the reserved marinade until a meat thermometer reaches 170°F. Serve immediately.

YIELD: 6 generous or 12 modest servings
