Labor Day is just around the corner and this recipe that Kathy found for Speedy Salsa-Chicken Quesadillas might be just the ticket to feed the family in the back to school crunch.
Kathy's comments: This is a crazy week at our house ... we just got back from vacation and we will be gearing up this week for a long drive to bring our oldest daughter, Lauren, back to college. So, between packing her things up and heading to all the last minute doctor appointments, I wanted to find something quick and easy. I tried this recipe for quesadillas that I found on Kraftfoods.com and they were great! So easy, the kids can make them. Five thumbs up!
What You Need

1/2 cup Thick 'n' Chunky Salsa $0.90
2 Tablespoons Miracle Whip Dressing $0.24
8 Flour Tortillas (6 inch) $1.04
3/4 lb Cooked boneless skinless chicken breasts, sliced (I used chicken tenders @ $4.79/lb)$3.60
1 Cup Mexican style shredded four cheese $1.25
2 Red bell peppers, thinly sliced as a side $2.78

From Your Pantry:
1/2 teaspoon chili powder
What to Do
MIX the salsa, dressing and chili powder; spread evenly onto tortillas.
LAYER the chicken and cheese evenly on half of each tortilla; fold in half to enclose filling.
HEAT a large skillet sprayed with cooking spray on medium heat. Add quesadillas, two at a time; cook 4 to 5 min. on each side or until lightly browned on both sides. Repeat with remaining quesadillas. Cut each quesadilla in half and then into three wedges to serve.
