Ten Dollar Dinners: Pulled Pork Sandwiches

A recipe that serves 12 hungry people for under $10 – is it too good to be true? Not if you have a slow cooker and Kathy's recipe this week ...

Kathy's Comments: I spotted this recipe in Good Housekeeping's Quick and Simple Magazine and was excited to give it a try ... mainly because it cooks in the slow cooker all day and you don't have to be there! This recipe serves 12 people (wow!) so invite some family and friends over or save the leftovers for another meal. This was a huge hit with my family and Lenny is going to make this one for the guys at the firehouse.

What You Need

4 lbs boneless pork shoulder blade roast @ $1.69/lb = $6.76 (I couldn't find a boneless roast, so I had the butcher at ShopRite remove the bone - no charge)
12 Sandwich buns (I used Kaiser rolls)$2.99
Total: $9.75

From Your Pantry:
1 medium onion, chopped
1/2 cup ketchup
1/3 cup cider vinegar
1/4 cup packed brown sugar
1/4 cup tomato paste 2 tablespoons sweet paprika 2 tablespoons Worcestershire sauce 2 tablespoons yellow mustard 1 1/2 teaspoon salt 1 1/4 teaspoon ground black pepper

What to Do
In a medium slow-cooker pot, stir together the onion, ketchup, vinegar, brown sugar, tomato paste, sweet paprika, Worcestershire sauce, mustard, salt and pepper until combined.
Add the pork and turn to coat well with the sauce mixture. Cover slow cooker and cook on low for 8 to 10 hours, or until pork is very tender.
Use tongs to transfer pork to a large bowl.
Turn the slow cooker setting to high, cover and bring sauce to a boil to thicken and reduce it slightly.
While the sauce is reducing, pull pork into shreds, using two forks.
Return the shredded pork to the slow cooker and toss with sauce to combine.
Cover cooker and heat pork through on high setting, if necessary.
Spoon pulled pork onto bottoms of sandwich buns, then cover with the tops.
