Chef Jamie's Easy Tres Leches Cake

A delicious sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and whole milk

A Tres Leches Cake is a delicious sponge cake soaked in three kinds of milk: evaporated milk, condensed milk, and whole milk. Without the use of butter Tres Leches is a very light, fluffy cake and does not have a soggy consistency, despite being soaked in milk.


Ingredients:
6 eggs
1 cup granulated sugar
1/8 teaspoon salt
1 cup flour
1 can sweetened condensed milk
1 can evaporated milk
1 cup heavy cream
1 teaspoon almond extract
2 teaspoons vanilla extract
 
Directions:
Preheat oven to 350°F. 
Whip eggs, sugar and salt until tripled in volume. 
Fold in flour. Pour mixture into parchment lined 9 by 11-inch baking pan and bake for 25 to 30 minutes. 
Set aside to cool.

Remove parchment paper and return cake to pan. 
With a skewer or toothpick, poke holes all over the top of the cake. 
Combine remaining ingredients and pour over cake. Refrigerate. 
Allow liquid to soak in for at least 2 hours. 
Serve with fresh fruit and whipped cream.
