Gazpacho Andaluz, El Porron, NYC
This simple summer recipe was stolen with permission from the chef and owner of El Porron in Manhattan, known only as Mr. G. If you’ve never used a porron before the exuberant photos lining the walls of El Porron, the recently opened Spanish tasca, will show you how. The restaurant is named after the Catalan blown-glass vessel that pours wine through a pointed spout leading directly into the mouth.
From its brick-walled, contemporarily decorated slice of the Upper East Side El Porron serves the food and wine discovered by Mr. G and his brother, after they had travelled extensively their native Spain - an endless array of Spanish wine bottles line the restaurant’s shelves and bar, and regional dishes exemplify the country’s broad offerings.
At El Porron, Mr. G presents an eclectic mix of classic and signature Spanish tapas, as well as hearty entrees and paella.
A night at the tasca may start with cold tapas, then hot, perhaps followed by entrees and paella or a flight of Spanish wines and sangrias. The hot tapas benefit from Mr. G’s love affair with sauces and popular dishes can be ordered as tapas portions or entrees; such as the Vieras con Tocino, or bacon-topped scallops and Gambas a la Plancha (grilled tiger shrimp) which are traditionally eaten with the shells in Spain. Heartier entrees include a Pollo con Pisto - the Spanish take on ratatouille, served with grilled chicken and Salmon Fresco a la Plancha or veal meatballs - Albondigas de Ternera.
The all-Spanish wine list contains an abundance of rare varietals and desserts include the Flan de Mocca, a coffee-infused flan made with Colombian coffee, and the Torrejas; strips of French toast soaked in Rioja and caramelized with brulee-like crust.
About the chef: Gonzalo “Mr.G” Bermeo has more than 25 years of experience as a chef, beginning at El Cid and most recently culminating at El Boqueron. He draws on the influences of his once-mentor Clemente Boscos and other notable Spanish chefs, and has earned himself a reputation as a tapas authority in his own right. El Porron is a family affair, conceived by Mr. G with his son and front-of-house director, Diego, and executed with the help of his Poconos-based restaurateur brother, Mario.

Gazpacho Andaluz Ingredients:
1 green bell pepper
1/2 Spanish onion
1 cucumber
1 tomato
2 cups of tomato Juice
2 cups of water
1/4 cup of white vinegar
1/4 cup of extra virgin olive oil
1 clove of garlic
1/2 teaspoon of Spanish paprika
1/2 of an Italian bread (only the white part)
*Set aside some very thin slices of the vegetables to use as a garnish.

Mix and blend all the ingredients together.
After blending, strain the mixture.
Chill for 3 hours in the refrigerator.
Garnish with thinly chopped vegetable pieces and serve.
