Jewel of Fruit Pie
A delicious, low calorie dessert (with only 147 calories per slice) from The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr– this is guilt free indulgence at its best!
This recipe makes 4 servings.
Jewel of Fruit Pie Ingredients:
1 cup rolled oats
1 banana, sliced crosswise
1 pint strawberries, washed, hulled and sliced
1 Granny Smith apple, peeled, cored and sliced medium thin
½ teaspoon vanilla extract
1 pinch cinnamon
1 tablespoon date sugar
1 pinch nutmeg
¼ cup water
Instructions:
Preheat the oven to 350 degrees.
Grind ¾ cup of the oats in a food processor.
Pack firmly on the bottom of a 9”x9” Pyrex baking dish and bake for 2 minutes.
Let cool.
Grind the remaining ¼ cup of oats and mix with the remaining ingredients.
Pour the mixture very gently over the crust and bake for 30 minutes.
Cool and serve.
