Tuna Melt with Mustard Sauce

Bet you thought you’d have to give up Tuna Melts on your diet, but thanks to this recipe from Nourish Cookbook, (which is a collaboration between Chef Scott Uehlein and the nutritional team at the Canyon Ranch Resort Spas), you can indulge in an old favorite for only 325 calories per serving!

This recipe makes 4 servings.

Tuna Melt with Mustard Sauce Ingredients:
one 6 ounce can of water-packed light tuna, drained
2 tablespoons minced yellow bell peppers
2 tablespoons sweet pickle relish
2 tablespoons minced celery
2 tablespoons canola oil mayonnaise
½ teaspoon Dijon mustard
pinch of sea salt
Pinch of freshly ground black pepper

For the Mustard Sauce:
1 tablespoon whole grain mustard
1 tablespoon Dijon mustard
1 teaspoon honey
½ teaspoon Colman’s dry mustard
2 tablespoons plain lowfat yogurt
4 slices of rye bread
Four 1-ounce slices Swiss cheese

Instructions:
Preheat the broiler.
Combine the tuna, red bell peppers, yellow bell peppers, pickle relish, celery, mayonnaise, mustard, salt, and pepper in a medium bowl and mix well.
Combine the whole grain mustard, Dijon mustard, honey, dry mustard, and yogurt in a small bowl or cup.
Spread 1/3 cup tuna salad on each slice of bread. Top with a slice of Swiss.
Repeat with the remaining ingredients.
Place the sandwiches under the broiler for 1 to 2 minutes, or until the cheese melts.
Serve each sandwich with 1 tablespoon mustard sauce.
