Seattle Times talks about how some of the new restaurants in Seattle, the upscale, quality, chef-driven restaurants, are going to counter service when basically what you do is you go up to the counter, you order at the counter, they might give you a number and then they bring you your food. It reminds me of when food courts first started in shopping malls.
