This week I made a tasty seafood entrée – just thrown together, but creating a delightful feast for less than $10!
I love broccoli rabe! It is one of my favorite greens. I bought two bunches the other day (on sale for $.99/lb) and planned on preparing it as I always do... sautéed with garlic and oil. However, this time I thought I'd try a little something different. I decided to throw in some shrimp and white beans and make it a whole meal instead of a side dish. Everyone loved it...well, except my middle daughter Jaci - she can't even stand the smell of fish never mind eating it. Needless to say, Jaci ate leftovers that night while the rest of us had no trouble eating her portion, too!
What You Need

2 Bunches of Broccoli Rabe (on sale @ $.99/lb x 2.82lbs.) $2.79
20 Shrimp - frozen, uncooked (portioned from a large 2 lb. bag) $6.00
1 15oz. can small white beans, drained $0.67
Total $9.46
From Your Pantry:
3 Cloves garlic - chopped
Salt and pepper
Olive oil
1/2 Cup chicken broth
Crushed red pepper (optional)
What to Do
Cut about 3-4 inches off the bottom of the broccoli rabe where the stems are thicker and discard.
Cut the remaining broccoli rabe in half and wash it thoroughly.
In a large pot sauté 2 cloves of garlic in a little olive oil.
Add the broccoli rabe to the pot and a little water (about a 1/2 cup), salt and pepper, and cook down until tender.
In a large skillet, sauté 1 clove of garlic in a little olive oil, then add the shrimp, watching closely because the shrimp will cook fast; about 2-3 minutes on each side.
Then add the can of beans, salt, pepper, and red pepper (if you are using) and 1/2 cup chicken broth and heat through.
Transfer the broccoli rabe into the skillet and mix all together before serving.
