Grilled Sirloin & Green Chile Nachos
Chef Jamie says: Grilled sirloin blanketed with fire-roasted green chilies and sharp cheese….What could be better? There is only one world for these Green Chile Nachos; killer!
This recipe makes 4 servings.
Ingredients:
1 pound Bristol Farms, or other, top sirloin steak
Olive oil
Your Favorite “Chef Jamie Spice Rub” or salt and pepper
2 green chilies (Poblano or Pasilla) or substitute 1/2 cup diced canned roasted green chilies
1 bag Bristol Farms, or other, white corn chips
2 cups shredded Monterey Jack cheese
2 cups shredded sharp cheddar cheese
Ingredients for the Chipotle Crema:
3/4 cup sour cream
1/4 cup mayonnaise
1 tablespoon lime juice
1 teaspoon adobo sauce from a can of chipotles in adobo sauce
Directions:
Preheat the barbecue to high and season the top sirloin with your favorite Chef Jamie Spice Rubs or salt and pepper.
Rub the meat all over with a bit of olive oil, then grill the steak to the desired doneness.
Let the steak rest for 5 minutes to allow the juices to re-circulate, then dice the steak into bite-size pieces.
Keep the grill fired up and fire roast the green chilies until the skins are blistered and blackened.
Peel and seed the chilies, then cut them into strips.
Make the Chipotle Crema by whisking together 3/4 cup sour cream, 1/4 cup mayonnaise, 1 tablespoon of lime juice and 1 teaspoon adobo sauce from a can of chipotles in adobo sauce.
Season with salt and refrigerate until ready to use.
Arrange the corn chips on a grill-proof baking sheet or disposable aluminum tray.
Top the chips with a layer of shredded Monterey Jack cheese, followed by the chilies, beef and a layer of shredded Cheddar cheese.
Place the pan on the grill, close the grill and allow the cheese to melt.
Serve the Nachos with Bristol Farms Guacamole and Chipotle Crema, for dipping.
