Chef Jamie’s Peach & Blackberry Cobbler with Sour Cream Ginger Biscuit Topping

Peach & Blackberry Cobbler with Sour Cream Ginger Biscuit Topping

Chef Jamie says: “This cobbler is the ultimate expression of summer! Use overripe peaches and fresh, seasonal berries of your choice, and serve the cobbler topped with lightly whipped cream or a la mode.”

Ingredients for the Biscuits:
1 cup plus 2 tablespoons all-purpose flour?
1/4 cup diced candied ginger?
2 tablespoons packed light brown sugar
1 1/2 teaspoons baking powder?
1/4 teaspoon baking soda?
1/4 teaspoon kosher salt
4 tablespoons unsalted butter (1/2 stick), cut into tiny cubes and frozen?
1/4 cup sour cream
2 tablespoons heavy cream

Ingredients for the Fruit:
1/4 cup all-purpose flour
1/2 cup packed light brown sugar
1/4 cup granulated sugar
1/4 teaspoon kosher salt
1 vanilla bean, split lengthwise and scraped, seeds reserved?
1 1/2 pounds peaches, pitted and cut into sixths (about 5 cups)?
12 ounces blackberries, or other (about 2 1/2 cups)
Extra heavy cream, for brushing the biscuits
Coarse sugar

Directions:
Preheat the oven to 375°.

For the biscuits, combine the flour, candied ginger, brown sugar, baking powder, baking soda, and salt in a mixing bowl and whisk to aerate and break up any lumps.

Add the frozen butter into the flour mixture and toss to coat. Add in the sour cream and heavy cream and, using your hands, knead the dough just until it just comes together. Divide the dough into six pieces and flatten into disks; cover and reserve in the refrigerator.

For the fruit, mix together the flour, brown sugar, granulated sugar, salt, and vanilla bean paste. Add the peaches and blackberries and mix until the fruit is evenly coated. Pour the fruit into a 2-quart baking dish and top with the biscuits.

Brush tops of biscuits with a heavy cream and sprinkle with sugar.?Bake the cobbler for 30 to 35 minutes or until the biscuits are golden brown and the fruit is bubbling.
