Chef Louie's Heart Healthy Stir-Fry

All these colorful veggies are packed with antioxidants and this dish is quick and easy to make, so you’ll have time to squeeze in a workout!
This recipe makes 4 servings
Ingredients:
2 tablespoons peanut oil or canola oil
1 cup of any of the following: beef strips, chicken chunks, shrimp, or tofu (mixing and matching is encouraged)
2 cups chopped romaine
1 cup chopped broccoli
1 cup chopped broccoli rabe
1/2 cup chopped cauliflower
1/2 cup chopped red bell pepper
1/2 cup chopped zucchini
2 tablespoons of soy sauce and rice vinegar, or, 4 tablespoons Hoisin sauce
3 clove chopped garlic
1 teaspoon grated lemon peel
cooked rice for 4
Instructions:
Heat a wok or heavy fry pan over medium high heat.
Add oil, then add your protein (beef, chicken, etc).
Cook 2 minutes for the beef, 3 to 5 for the chicken, shrimp or tofu.
Add all the veggies and toss vigorously adding either the soy and rice vinegar or the hoisin sauce.
Continue tossing until softened to your liking, usually about 2 to 3 minutes.
Turn off the heat, then add the garlic and the lemon peel and serve over rice.
