Chef Louie's Italian Sauce & Garlic Spread

Northern Italian Simple Sauce
Ingredients:
1 stick of butter
1 yellow onion
1 (28 ounce) can chopped tomatoes, or 6 large tomatoes
Chef Louie’s Instructions:
Take one stick of real butter and melt in a sauce pan, adding one yellow onion that has been peeled and cut in half as the melting turns to a simmer.
After simmering 5 minutes over medium heat, add one large can (28 ounce) of chopped tomatoes, or better still – 6 large tomatoes, chopped. Take a spoon or fork and mash the tomatoes into a good puree as they cook, then simmer for 45 minutes or so. Take out the onion and the sauce is complete!
I like to pour this over my large cut pasta, like ziti, then top it with a good shake of my favorite grated cheese.
Simple Garlic Spread (Chef Louie’s Secret Weapon)
Ingredients:
1 head of fresh garlic
1 teaspoon kosher salt
½ teaspoon cracked black pepper
1 tablespoon freshly grated Parmesan
Olive oil
Chef Louie’s Instructions:
Take one head of fresh garlic (the stuff in a jar absolutely won't do!), clean and give it a fine chop.
Put into a small ramekin and add one tablespoon of fresh grated Parmesan, one teaspoon of kosher salt, 1/2 teaspoon of fresh, cracked black pepper, then enough olive oil to make it a soupy blend.
Spoon this over sliced tomatoes, any cold veggie dish like a crudités, or better still, slather a heavy dose on some crusty Italian bread.
