Chicken Poached in White Wine with Tomatoes

From Bob Greene’s The Best Life Diet Cookbook, this simple recipe is bursting with flavor and would even be great for entertaining. Serve with brown rice or roasted vegetables for a healthy and nutritious meal.

This recipe makes 4 servings. Preparation time 5 minutes, total time 30 minutes.

Chicken Poached in White Wine with Tomatoes Ingredients:
Vegetable oil cooking spray
1 onion, sliced
2 cloves garlic, minced
2 tomatoes, seeded and diced
1 cup dry white wine
1 cup water
Pinch of cayenne, or more to taste
1 pound boneless, skinless chicken breasts, cut into 4 portions, about 4 ounces each
1/8 teaspoon salt

Instructions:
Heat a large heavy-bottomed skillet over medium heat and coat with cooking spray.
Add the onion and cook for 5 minutes. Add the garlic and cook for an additional 5 minutes.
Add the tomatoes, wine, water, and cayenne and bring to a boil.
Add the chicken and cover with the tomato mixture. Bring to a boil.
Reduce the heat to low and simmer for 5 minutes.
