Chicken With Lemon and White Wine

Ingredients

4 boneless, skinless chicken breasts, about 1lb*

3 eggs, beaten

¾ cup breadcrumbs

¼ tsp oregano

1 tsp chopped fresh parsley

¾ stick unsalted margarine

¾ cup lemon juice

¾ cup white wine (not cooking wine)

 

Preparation

In a large skillet, melt margarine over low heat. Mix together spices and breadcrumbs. Dip the chicken into the beaten eggs, then into the breadcrumb mixture, and then back into the eggs. Sauté lightly until browned, then add the white wine and lemon juice. Continue to simmer lightly, basting with the liquid in the skillet, for about 15 min.

*You can also substitute chicken breasts with veal or pork filets.
