Chocolate Glazed Hazelnut Cookies

This delicious recipe makes about 36 indulgent, sweet treats.

Ingredients for the Cookies:
11/2 cups (6 oz) hazelnuts
2/3 cup confectioner’s sugar
½ cup brown rice flour
½ cup cornstarch
pinch of fine sea salt
½ cup (1 stick) butter, cold and cut into small cubes

Ingredients for the Chocolate Glaze:
4 ounces 60% to 70% bittersweet dark chocolate, chopped
2 tablespoons canola oil

Instructions for the Cookies:
Preheat the oven to 325 degrees. Line a large baking sheet with parchment paper.
Combine the hazelnuts and confectioner’s sugar in a food processor and process to a fine, even meal, about 3 minutes.
Add the brown rice flour, cornstarch and salt. Blend briefly to mix well.
Add the butter and process until a soft, crumbly dough forms.
Pinch off small pieces of the dough and form into 1 inch balls.
Flatten slightly and arrange on the baking sheet, spacing the cookies 1 inch apart. 
Bake until very lightly colored, about 15 minutes. (The underside should be a light tan).
Leave on the baking sheet for 2 minutes to firm up slightly, then transfer to a wire rack and let cool completely.
Transfer to the freezer, in one layer and leave until very cold, at least ½ hour.

Instructions for the Glaze:

To make the glaze, place the chocolate in a small bowl and melt over hot water.
Stir in the canola oil.
Lay a sheet of aluminum foil on a work surface.
Dip each cookie in the chocolate, covering about 1/3 of the top surface.
As the cookies are semi-frozen, the glaze will set almost immediately.
Place on the sheet of foil and let come to room temperature before serving.
(These cookies freeze well).
