Coffee Pudding-in-a-Tumbler

This wonderful drink is a combination of pudding with the luxury of coffee and the zing of sparkling water. It’s more than an iced coffee, it’s DESSERT!

This recipe makes 6 servings.

Pudding-in-a-Tumbler Ingredients:
1 pint of Original Blend Coffee, brewed very strong
4 drops of pure almond extract
2 large eggs, well beaten
2 tablespoons sugar
4 tablespoons thick cream
1 cup of sweetened whipped cream
1 quart of ice cold sparkling water
1 pint of shaved ice

Directions:
Brew the coffee, then add the almond extract and place in the top of a double boiler.
Heat until boiling then add the beaten eggs, sugar, and thick cream but cook only until the custard coats the back of a wooden spoon.
Remove and allow to cool, then chill.
When the custard is completely chilled, about two hours, in a very large clean glass or metal bowl, whip the sweetened whipped cream until thick and gently fold it into the chilled custard mixture. Slowly add the quart of icy cold sparkling water and a pint of shaved ice.
With a ladle, scoop out the mixture and serve in tall sherbet glasses or tumblers.
