These are addictive! They are a special treat and well worth the time and effort. They’ll be perfect for gifting - if you can stop your family from munching on them. Double up the recipe and you’ll be able to give and receive!
This recipe makes about 36 pieces.
Coffee Walnut Candies Ingredients:
1 1/2 cups chopped walnuts
1 cup brown sugar, packed
1/2 cup granulated sugar
1/2 cup light cream
1 tablespoon espresso or coffee, pulverized
1 teaspoon pure vanilla extract
Directions:
Preheat the oven to 350°F.
Line a large 9"x6" deep loaf pan with foil, and cover up and over the sides.
Butter the foil.
Spread the nuts in a single layer on a cookie sheet and toast them for 10 minutes in the oven, stirring them occasionally.
Keep the walnuts warm while preparing the candy mixture.
Butter the sides of a heavy 1 1/2 quart sauce pan.
In the saucepan, combine the brown and white sugars together with the cream and the coffee, and heat over high heat until the mixture is boiling, stirring constantly.
Reduce the heat to medium and, using a candy thermometer, heat the mixture until the thermometer registers 236°F.
Remove the pan from the heat and remove the thermometer from the pan.
Add the vanilla and beat gently for two minutes to incorporate it, then fold in the walnuts gently until coated.
Pour out the mixture into the loaf pan and cool for about 10 minutes.
To remove from the pan, use the foil to lift the candy out and place on a cutting sheet or cutting board.
Cut into lengthwise pieces, then cut into rectangles or triangles.
