Corn on the Cob with Coffee Butter

There are as many ways to cook corn on the cob as there are varieties of this totally American staple. You can boil 'em up or wrap them and bake 'em or, consider grilling them in their husks right on the grill. No matter which method you use, this coffee butter will make the sweetest corn even tastier. If you've never grilled corn, here's a fabulous method.

This recipe makes about 6 servings.

Corn On The Cob with Coffe Butter Ingredients:
6 large corn on the cob, white, yellow or variegated
1 tablespoon lemon juice
1 tablespoon decaf or original blend coffee, ground fine (or use espresso)
1/4 cup butter or margarine, melted
1/4 teaspoon onion powder
1/2 teaspoon salt

Corn On The Cob Directions:
Peel away the outer layers of the corn husk, leaving a few layers for protection.
Grill in the husk over hardwood, (not briquettes!) for best flavor.
Turn the ears frequently until the outside husks are completely charred, about 5-10 minutes. Set aside while you grill the meat.
When ready to serve, peel back the husks and brown the kernels 30 seconds to a minute for an extra roasty color and smoky flavor.
Cut the stem end of the cob up to the bottom with a sharp heavy knife then peel back the husks and silk.
Brush away burnt silks as necessary. Brush with coffee butter (see below) and enjoy!

Coffee Butter Directions:
Melt the butter, then add all the ingredients and whip well. Serve immediately.
