An easy and economical Crock Pot roast beef dinner.

The crock pot is a wonderful thing! 
There is nothing like putting everything in and forgetting about it and when you walk in the door at the end of the day the house smells amazing and dinner is ready!  So, I bought a roast the other day on sale and decided to cook it in the crock pot.  I sort of combined my pot roast recipe with some of the tips from the crock pot recipe book for pot roast and it all turned out just great!  The roast was so tender and the veggies were great.  One complaint from my family was that there wasn't enough 'juice' leftover to pour over the meat…  Maybe next time I will add a little beef broth to whatever liquid is left after cooking and make a beef gravy.

 What You Need

1 x 2-3 lb. boneless beef roast   (on sale $2.79/lb.) $6.56
1 onion (sliced) $0.50
1/4 of 16 oz bag of baby carrots $0.43
3 medium potatoes (sliced) $1.00
Total $8.49

From Your Pantry:
Garlic powder
Olive oil
Saltandpepper
1/2 cup water

What to Do
Season the roast with salt, pepper and garlic powder. 
In a large pot, sear the roast in a little olive oil on all sides until brown. 
Put the vegetables in bottom of the crock pot. 
Place the roast on top of the vegetables in the crock pot. 
Add the water. 
Cover and cook on low for 9 hours - or on high for 5-6 hour.
