Fresh Fruit Pizza Pie for Mom!

Here’s a way you could have breakfast in bed this Mother’s Day - even if your kids are too young to cook it for you… Why not make this delicious Fresh Fruit Pizza Pie from The Wholesome Junk Food Cookbook by Laura Trice the day before? Let it chill in the fridge overnight and have a fun and festive breakfast in bed for the whole family on Mother’s Day morning!

Any combination of fresh fruit can be used in this beautiful and healthy pie, so you could make a trip to the farmers’ market in preparation.

This recipe makes 8 servings.


Fresh Fruit Pizza Pie Ingredients for the Crust:

1/3 cup expeller-pressed or organic canola oil or grapeseed oil
2 tablespoons agave syrup
1 egg
1 1/3 cups spelt flour, white spelt flour or gluten free flour
1 teaspoon cream of tartar
½ teaspoon baking soda
½ teaspoon sea salt

Ingredients for the Filling:
8 ounces all-natural or organic cream cheese, at room temperature
1 tablespoon agave syrup
1 banana sliced
2 tablespoons lemon juice (optional)
1 cup sliced fresh strawberries
2 kiwi, peeled and sliced
1 cup blueberries
1 cup sliced fresh peaches

Instructions:
Preheat the oven to 350 degrees F.
For the crust combine the oil, agave syrup, and egg in a large mixing bowl and beat well.
Sift the flour, cream of tartar, baking soda, and sea salt together and add to the creamed mixture, mixing well.
Press into the bottom and up the sides of a 12-inch round pizza pan.
Bake for 12 to 15 minutes and let cool.
For the filling, whip the cream cheese and agave syrup with an electric mixer. Spread over the bottom of the baked crust.
Put the banana slices, if desired, in a small bowl and add the lemon juice, stirring gently.
Arrange the bananas, strawberries, kiwi, blueberries and peaches (or your choice of fruits) in a decorative pattern over the cream cheese. Cut like pizza and serve.
