Greek Eggplant Rounds
This great low calorie appetizer is perfect for entertaining over the holiday season – at 122 calories per serving, it won’t ruin all the hard work you’ve been putting in on your diet, but it will be a delicious party canapé for you and your guests.
This recipe makes 4 servings of 2 rounds per serving.
Prep time 15 minutes, cooking time 30 to 35 minutes.
Ingredients:
1 large eggplant, unpeeled
Olive oil
Salt and pepper
1 cup crumbled feta cheese
2 teaspoons dried oregano
½ cup prepared roasted red bell peppers, chopped
½ cup pitted kalamata olives, roughly chopped
8 sprigs basil
Instructions:
Preheat the oven to 350 degrees.
Trim ends of eggplant and slice into 8 ¾ inch rounds.
Place eggplant on large baking sheet, brush both sides of slices with olive oil and season with salt and pepper.
Bake, turning over once, for 20 to 25 minutes or until softened and lightly browned.
Brush with more oil as necessary to keep moist, but not greasy.
Top each round with feta cheese, oregano, roasted red peppers and olives.
Return to the oven and bake for about 8 minutes or until cheese begins to melt.
Transfer to a platter or individual plates and garnish each round with a sprig of basil.
