Jen's Balsamic Bruschetta

Jen from Doug Stephan's Good Day Radio Show created this tasty treat - it's perfect for a delicious snack or appetizer.

Jen's Balsamic Bruschetta Ingredients:
Loaf of Italian bread 
1 garlic clove, chopped 
¼ cup extra virgin olive oil 
1 teaspoon balsamic vinegar 
1 teaspoon lemon juice 
1 cup Roma tomatoes, chopped 
¼ cup fresh basil, chopped 
Salt
Pepper

Instructions:
In a bowl, combine the tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, pepper and lemon juice. 
Mix together and then refrigerate for about two hours. 
Slice the Italian bread on a diagonal, rub with a garlic clove and brush with olive oil. 
Toast the small slices in the oven for about ten minutes, keeping an eye on the bread so you don t burn it. 
Top the slices with the tomato and balsamic mixture and sprinkle with grated parmesan cheese.
