Leek, Cauliflower, Bean & Celery Salad

This recipe makes 4 servings.

Ingredients:
½ head of cauliflower, blanched and cut into bite sized pieces
1 cup of green beans, blanched and diced
¼ cup diced celery
¼ cup chopped leeks
¼ cup diced red bell pepper
1 tablespoon minced Italian parsley
¼ cup white balsamic vinegar
1 teaspoon celery seeds
1 teaspoon paprika
1 tablespoon frozen apple juice concentrate
1 teaspoon low-sodium Dijon mustard
¼ cup fat-free sour cream

Instructions:
In a large bowl, mix all ingredients together. Chill and serve cold.
