Little Delicious Roll
Stolen with permission from Chef Jack Yang of Shinto Japanese Steakhouse, Sushi Bar and Lounge this recipe will show you how to make a sushi roll at home that will be a delight! Shinto is the only Zagat-rated Japanese steakhouse in the Naperville area and their hibachi grills are only the second in the state to feature a new smokeless, downdraft technology that saves 40 percent of energy so it’s more environmentally friendly and guests don’t leave smelling like their food. With specials every day of the week, plus a late night bar menu offering half-priced sushi and appetizers until the 1 or 2am, a visit to Shinto is a must if you are in the area.
The Little Delicious Roll is a mouth-watering concoction of Shinto’s original spicy tuna mix, avocado, cream cheese, kani (crab) – then wrapped in seaweed and flash-fried with a tempura batter. It is served with Shinto’s homemade spicy mayo and a sweet and tangy eel sauce.
Note: the ingredients above and materials called for can be found at any Japanese or Asian grocer. Also this recipe calls for a deep fat fryer.
About the chef: Jack Yang, Sushi Chef at Shinto Naperville has 10 years experience and has traveled and worked all over the country. His signature creations often use mangoes and kiwis as ingredients and his signature cooking method is a hand searing method which uses a hand held blow torch. When he’s not working hard at creating new dishes he enjoys break-dancing!

Little Delicious Roll Ingredients:
2 ounces cream cheese (sticks)
1 full sheet nori (seaweed)
5 ounces sushi rice
2.5 ounces **Spicy Tuna
1.5 ounces cucumber (julienne)
1 crabstick
4-5 ounces tempura batter
3 ounces Panko bread crumbs
1 tablespoon eel sauce
1 tablespoon spicy mayo
Spicy Tuna Ingredients (vary quantities according to taste):
Chopped sushi grade tuna
Tobiko (flying fish egg)
Chili oil
Siracha (a spicy paste)
Mayonnaise
Scallions

Combine all the tuna, tobiko, chili oil and sirachi together in a small bowl, tasting as you go, add a touch of mayo to thicken it up and sprinkle with scallions.

Lay the nori flat and spread the sushi rice gently over the nori, covering it almost completely.
Leave an one inch space across the top of the nori.
Spread the spicy tuna over the rice, distributing evenly.
Lay the cream cheese, cucumber, and crabstick over the spicy tuna, horizontally and close together.
Roll the sheet together, using a bamboo sushi mat.
Press the one inch space into place on the end of the roll. Make sure no ingredients are sticking out the ends.
Dip the entire roll into tempura batter in a shallow pan, covering the roll completely, then roll in Panko bread crumbs.
Dip into deep fryer at 400 degrees, fry for 2-3 minutes, or until golden brown.
Slice the roll into 8 pieces, plate, drizzle with eel sauce and spicy mayo and serve with pickled ginger and wasabi.
