Mango Parfait
From The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr, a delightful dessert that will cool you down and keep you safely on your diet; with only 142 calories per serving!
This recipe makes 4 servings.
Ingredients:
2 mangoes, peeled, sliced and puréed (should make about 1 1/2 cups purée)
2 cups nonfat plain yogurt
1 tablespoon Splenda
¼ tablespoon frozen apple juice concentrate
½ cup raspberries
4 mint sprigs
4 mango slices
Instructions:
In a large bowl, combine the mango purée and yogurt.
Add the Splenda and apple juice concentrate.
Whisk until smooth.
Place the raspberries on the bottom of 4 white wine glasses or 4 stemmed water glasses.
Fill until 2/3 full with the mango/yogurt mixture.
Place glasses in freezer for approximately 2 hours, or until parfaits are half frozen.
Garnish each glass with a mint sprig and a mango slice.
Serve immediately.
