No-Bake Coffee Pie

This is a breeze to make using a pre-baked, store-bought pie crust. Make it in the morning, refrigerate, and it's ready for dinner (or lunch, if you can’t wait!)

There are a number of brands of Irish whiskey, but Jameson or Bushmills give the best flavor for this recipe, and of course the alcohol is optional – the pie tastes great with or without it.

No-Bake Coffee Pie Ingredients:
1 small (3.5 ounce) package of Vanilla Whipped Dessert Mix
1 cup cold milk or adjust to amount listed on the dessert mix package
2 teaspoons pulverized coffee grounds or espresso
1/3 cup water
3 tablespoons Irish whiskey (optional)
½ cup whipping cream
1 8" baked pastry shell
Chocolate shavings or pulverized espresso powder for garnish, as desired

Directions:
Put a clean copper or stainless steel bowl in the refrigerator to chill.
It's best to use an electric mixer for this; hand held or countertop work just as well.
In a small mixing bowl, combine the Vanilla Whipped Dessert Mix with the coffee, then add milk and beat vigorously until thick.
Blend in the water and whiskey (substitute 3 tablespoons of water if you are not adding the alcohol), until mixture is fluffy, about two minutes.
Remove the bowl from the refrigerator and use it to whip the whipping cream until thick and gently fold it into the dessert mix mixture.
Pour into the pie shell and refrigerate for up to four hours.
To serve, cut into thin slices, garnish with chocolate shavings or espresso powder and serve.
