This delicious and nutritious dish has only 173 calories per serving, paired with a salad or steamed vegetables it is so tasty you’ll think it came from a fancy restaurant rather than your own kitchen! The recipe calls for lemon grass stalks – use only the bulb’s soft interior – beat the stalk with the back of a knife and peel away until you get to the soft interior. Each stalk yields about 1 teaspoon.

This recipe makes 4 servings.


Ingredients:
1 pound salmon, sliced into 4 portions
1 tablespoon chopped garlic
1 teaspoon paprika
1 tablespoon chopped fresh ginger
4 stalks lemongrass 
1 tablespoon lemon juice

Instructions:

To create the marinade, puree all ingredients except the fish in a food processor.
Pour over the fish and marinade for 20 minutes.
In a hot non-stick skillet, sear the salmon for 3 minutes on one side.
Flip, cover and cook on moderate to moderate-to-low heat until done, about 5 to 8 minutes depending on the thickness of the fish.
Serve hot or cold.
