Sam & Harry's, Schaumburg, IL Nutty Chicken Salad

Stolen with permission from James Papadopolous, Chef de Cuisine at Sam & Harry’s in Schaumburg, Illinois, this recipe would be a great use for some of that grilled chicken from your barbecue this Memorial Day Weekend!

About the chef: at the impressive age of 24, Chef de Cuisine, James Papadopoulous brings creativity and dedication to Sam & Harry’s, with his energy and eclectic, yet clean cooking style. Driving Papadopoulos culinary skill is an energized passion for his craft that runs through his veins, literally, well almost; with his food-inspired tattoos.
After growing up in the Chicago area he started working in the restaurant industry as a dishwasher at a mom and pop pizza place in Woodridge, Illinois. At the time, Chef James didn’t know what he wanted to do in life, but loved the energy of the restaurant scene and seemed to keep gravitating towards food. After attending culinary school, Papadopoulos was hand-selected to work at De La Costa where he thrived in the fast-paced environment and learned the art of layering flavors. Chef James then went to work at the Chicago Oak Brook Marriott where he was able to bring his energy and enthusiasm to the hotel food and beverage world. After two years of service he was brought on board to help the launch of Sam & Harry’s where he served on the culinary team for over a year before recently being named as Chef de Cuisine.

This salad is served for $10 at Sam & Harry’s and makes 1 or 2 servings (one entrée or two small salads).
(Please note: the Mustard Vinaigrette makes 4-5 servings.)

Nutty Chicken Salad Ingredients:
4oz mixed greens
1 grilled chicken breast, sliced
¼ cup dried cranberries
¼ cup pecans
¼ cup almonds
¼ cup cashews
2 tablespoons red onion, small dice
¼ cup grape tomatoes, sliced

Mustard Vinaigrette Ingredients:
2 tablespoons whole grain mustard
1teaspoon honey
¼ cup sherry vinegar
¾ cup canola oil
1teaspoon salt
1teaspoon black pepper

Steal This Recipe® Step by Step Instructions for the Mustard Vinaigrette:
Combine the mustard, honey, vinegar, salt, & pepper. 
Whisk in the canola oil in a thin steady stream until emulsified.

Toss the greens with the tomatoes, onions, cranberries, pecans, almonds, cashews, and 2 ounces of the vinaigrette. 
Plate the salad, top with sliced chicken breast and serve.
