Meat, potatoes and vegetables all in one dish...

I was flipping through an old Reader's Digest cookbook of One Dish Meals and this recipe caught my eye. After a quick glance at all the ingredients, it sounded like something my whole family would like. I used a baking dish instead of a pie pan, and it took a little longer to cook because I may not have sliced the potatoes thin enough... so be sure to slice them as thin as possible – or increase the cooking time. It was a nice hearty meal, with your meat, potatoes and vegetables all in one dish... and it tasted great! Thumbs up from the whole clan!

1 large sweet red pepper, cut into thin strips $1.19
1 medium zucchini, thinly sliced $1.08
1 pound sweet Italian sausage, casings removed $2.49
3 medium potatoes, peeled and sliced very, very thin $1.68
4 oz grated Parmesan cheese $2.08

From Your Pantry:
2 tablespoons olive oil
2 teaspoons minced garlic
1/2 teaspoon black pepper
1 teaspoon dried basil or 1/4 cup fresh basil minced

What to Do
Pre-heat the oven to 425 degrees.
Heat 1 tablespoon of oil in a 12 inch skillet, add the red pepper and zucchini and sauté until soft - about 5 minutes.
Stir in garlic, black pepper and basil and sauté 2 minutes longer.
Add the sausage to the skillet, break up any clumps and sauté until no longer pink, but not quite cooked through. Remove from heat.
Toss the potatoes with the remaining 1 tablespoon of olive oil.
Spread 1/4 of the potato slices, overlapping slightly, over the bottom of a lightly greased 10-inch pie pan or a 13" x 9" x 2" baking dish.
Spread 1/3 of the skillet mixture on top, followed by 1/3 each of the Parmesan and mozzarella cheese. Press each layer down with your hands. Repeat the layers twice more, finishing with a top layer of potatoes.
Cover with foil and bake in the oven for 40 minutes.
Remove foil and bake until potatoes are crisp and cooked through - 5 to 10 minutes more.
