Slow Cooker Red Snapper and Succotash

Ingredients:
1 onion, chopped
1 (10 ounce) package of frozen lima beans
2 stalks celery, chopped
2 cups frozen corn kernels
½ teaspoon salt
½ teaspoon ground ginger
1/8 teaspoon pepper
¼ cup apple cider vinegar
¼ cup sugar
2 tablespoons butter
1/3 cup sour cream
½ pound red snapper fillets
Salt and pepper to taste
½ teaspoon paprika
Instructions:
In a 3 quart oval slow cooker, combine onions, lima beans, corn, salt, ginger, and pepper; mix gently.
In a small bowl, combine vinegar and sugar; blend well.
Pour into slow cooker.
Cover and cook on low for 7-8 hours or until succotash is blended and hot.
Stir in butter and sour cream.
Sprinkle fillets with salt and pepper to taste, along with paprika.
Spoon some of the succotash out of the slow cooker.
Layer fish and succotash in slow cooker, making sure no fillets are touching.
Cover and cook on low for 1 to 11/2 hours or until fish flakes when tested with a fork.
Stir to break up fish and blend mixture, then serve immediately.
