Spinach and Mushroom Crustless Quiche

A delicious entrée with only 100 calories per serving? Hard to believe but in this case it’s true! Serve this tasty Crustless Quiche with salad or steamed veggies for lunch or dinner and you can treat yourself to dessert! From The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr.

This recipe makes 4 servings.
Ingredients:
½ cup diced onion
2 tablespoons chopped garlic
24 oz frozen chopped spinach, drained
8 oz sliced fresh mushrooms
1 tablespoon granulated onion
1 tablespoon granulated garlic
¼ teaspoon ground black pepper
¼ cup egg whites
Pam or other oil spray

Instructions:
Preheat oven to 400 degrees.
In a large nonstick skillet, sauté the onion and garlic until brown.
Add the spinach, mushrooms, granulated onion, granulated garlic and black pepper and cook until spinach is hot, about 2 to 4 minutes.
Let quiche mixture cool in refrigerator.
When mixture is cool, mix in the egg whites.
Spread mixture on a half-sheet pan lightly sprayed with oil.
Bake for 15 minutes.
Let stand at room temperature for 10 minutes before cutting into servings.
