Steak with Mushrooms From the $7 a Meal Cookbook by Linda Larson

From the $7 a Meal Cookbook by Linda Larson here’s a great recipe for entertaining that won’t break the bank! By marinating the meat you can buy a much cheaper cut and it will still be tender and very flavorful. 
Please note: this recipe uses a grill to cook the steak, but you could also use a broiler.

This recipe makes 4 servings for around $7.

Ingredients:
1 lb shoulder round steak
3 tablespoons apple cider vinegar
1 tablespoon vegetable oil
1 tablespoon butter
1 onion, minced
1 1/3 cups sliced mushrooms
2 tablespoons flour
1 cup beef broth
½ cup water
¼ teaspoon ground coriander
1 tablespoon Worcestershire sauce
1/8 tablespoon pepper

Instructions:
In a glass dish combine the steak, vinegar and oil. Cover and marinate for at least 8 – 24 hours.
When ready to eat, prepare and preheat the grill. Drain the steak, reserving the marinade.
In a large skillet, melt the butter over medium heat.
Add the onion and mushrooms; cook and stir until the liquid evaporates, about 8 – 9 minutes.
Stir in the flour; cook and stir for 2 minutes.
Add the beef broth, water and marinade liquid and bring to a boil.
Stir in the coriander, Worcestershire and pepper; reduce heat to low and simmer while cooking the steak.
Grill the steak 6 inches from medium coals for 7 – 10 minutes, turning once, until steak reaches desired doneness.
Remove from heat, cover and let stand for 10 minutes.
Slice thinly against the grain and serve with the mushroom sauce.
