With Garlic Rice and Asian Coleslaw

This tasty entrée will satisfy the whole family and is a great alternative to takeout - no suspicious ingredients in this recipe - but with takeout - who knows? And no-one will guess this recipe is Allergy Friendly!

This surprisingly simple recipe from the Australian Women’s Weekly 'Gluten Free Cooking Supplement' is gluten, wheat, dairy and nut free.
But please note: the wheat-free tamari in the recipe does contain soy, so if you need to, you could substitute seasoned rice vinegar instead – using about half as much.

This recipe makes 4 servings.


Sticky Chicken with Garlic Rice and Asian Coleslaw Ingredients for the Sticky Chicken:
4 (600g) chicken drumsticks
8 (680g) chicken wings
1 clove garlic, crushed
1/3 cup (80ml) honey
1 tablespoon ground coriander
1 tablespoon ground cumin
½ teaspoon chili powder

Ingredients for the Garlic Rice:
1 cup (200g) long-grain white rice
¾ tablespoon (10g) butter 
1 clove garlic, crushed
1 tablespoon flat leaf parsley, finely chopped

Ingredients for the Asian Coleslaw:

½ (300g) medium Chinese cabbage, finely shredded
1 (120g) medium carrot, coarsely grated
3 green onions, sliced
¼ cup (60g) wheat-free tamari
1 teaspoon sugar

Sticky Chicken Instructions:
Heat the oven to moderate heat (350 -375).
Heat a small frying pan, add the spices and cook until fragrant, stirring.
Stir in the honey and 1 clove of crushed garlic.
Lightly oil a baking dish and warm the honey in a small saucepan.
Place the chicken in the baking dish and brush with the honey.
Bake uncovered in a moderate oven for about 40 minutes for about 40 minutes, or until the chicken is cooked through.
Brush the chicken with the pan juices during the cooking.

Garlic Rice Instructions:
Cook the rice in a large saucepan of boiling water, uncovered, until tender, drain.
Return the rice to the pan, add the butter, the other clove of crushed garlic and the parsley; stir until the butter is melted.

Asian Coleslaw Instructions:
Combine all ingredients in a large bowl and stir until thoroughly dressed.

Serve the Sticky Chicken with Garlic Rice and Asian Coleslaw.
