Sweet Potato and Apple Salad
From The Pritikin Edge by Robert A. Vogel, M.D., and Paul Tager Lehr this recipe makes a great dessert as well as a salad. For dessert chill it in the freezer before sitting down to your main course and by dessert time it will be ready to serve.
This recipe makes 4 servings.
Ingredients:
3 cups of cooked, diced sweet potatoes
1 cup diced apple
1 tablespoon lemon juice
2 ounces fat-free sour cream
½ teaspoon cinnamon
½ tablespoon frozen apple juice concentrate
½ teaspoon vanilla extract
Instructions:
In a large bowl, mix all ingredients well.
Refrigerate for 30 minutes before serving.
