With Pepperoni and Spinach

The holidays are upon us, so I was planning on decorating the Christmas tree today and wanted to plan a dinner that would take very little time and mean that I would not have to stand over the stove. So, I figured I would make a quiche since I could just pop it in the oven and continue decorating while it baked. Simple, simple, simple...but delicious! This recipe calls for spinach but you can certainly substitute that for artichokes or even broccoli if you are not a spinach fan. Either way, I think you will like it...we all did!

What You Need
From the Store:

1 frozen deep dish pie crust $1.75
1 x 10 oz package of frozen spinach $0.89
1/2 cup(about 1/4 stick) of pepperoni (chopped) $0.75
15 oz ricotta cheese $1.67
1 cup shredded mozzarella $1.24
3/4 cup grated parmesan cheese $3.00
Total $9.30

From your pantry:
1 clove garlic – minced
3 eggs (beaten)
black pepper

What to Do
Microwave the spinach for 4 minutes, then drain well.
Preheat oven to 400 degrees.
Mix all ingredients together in a large bowl.
Pour into the pie crust.
Bake for 35 minutes.
