This recipe serves 4.
Ingredients:
1 large red bell pepper, diced
1 large yellow bell pepper, diced
1 large onion, diced
8 cloves of garlic cut into large pieces
½ cup low sodium vegetable stock
½ teaspoon of low sodium soy sauce
¼ teaspoon black peppercorns, ground
½ cup white wine
1 pound firm tofu
½ bunch Italian parsley leaves, chopped
Directions:
In a large non-stick skillet over medium heat, sauté the bell peppers onions and garlic.
When the onions are translucent, add the stock, soy sauce, black pepper and wine.
Cook until liquid is reduced by half. Set sauce aside.
In a large nonstick skillet, sear the tofu on one side.
Add the sauce to the skillet and let the tofu cook in the sauce for 3 minutes.
Garnish with the parsley. Serve hot.
