Vanilla Ice Cream with Simply Fabulous Espresso Sauce

If you can boil water, you can make this very simple, totally luscious coffee sauce. We use instant espresso for its convenience and speed, but 1 cup (8 ounces) of freshly brewed espresso works just as well, and tastes divine.

This recipe makes 8 servings and doubles easily.

Simply Fabulous Espresso Sauce Ingredients:
1 cup water
2 tablespoons instant espresso
2 pints vanilla ice cream
2 tablespoons top quality dark chocolate, finely chopped, (Valrhona or similar) with extra for decoration

In a small saucepan, bring the cup of water to a boil.
Add the water to the instant espresso, stir until dissolved.
Add 1 tablespoon of the dark chocolate pieces and stir with a wooden spoon until they dissolve.
Place a scoop of the vanilla ice cream in each of eight coffee cups or small bowls.
Drizzle the sauce over the ice cream and sprinkle the remaining chocolate bits on top.
Place the cups (if using) on their matching saucers, add a teaspoon, and serve immediately.
