grass fed water buffalo fresh mozzarella is a HIT!
Practically every restaurant these days serves a caprese salad - you know tomatoes and sliced buffalo mozzarella - and we love it (at least I do). What many people seem to not know is that it is actually made from buffalo milk - not cow's milk. The other thing that most are not aware of is that true buffalo mozzarella is regulated by a Consortium of cheese makers in Campania to monitor its production. Which is why this product is a bit surprising to me since its imported from Columbia, not Italy. This cheese is very tasty. There is basically no difference in nutritional value of buffalo mozzarella and cow's milk but does contain more calcium, iron and phosphorus. Three and a half ounces is 85 calories, 7 grams of fat, no carbs, no sugars, 4 grams of protein and 170 mg of sodium.
