Artisanal Dry-Cured Saucisson Sec is a HIT!

Many are familiar with the Italian dried sausage, but this is a new and very delicious twist. Dry cured duck sausage. Saucission - just means summer sausage - think of it as the French version of Italian salamis. My favorite way to eat is just plain with a little mustard, but certainly this can be used in a variety of ways. Texture is great, remember to cut it thick to get the best flavor. One ounce which is 1/6 of the package is 100 calories, 7 grams of fat, 9 grams of protein and no sugars. Does have 500 mg of sodium, while higher than I'd like, it is lower than many other traditional salamis.
