Quark is a HIT!
I first tasted quark in Cologne Germany over 30 years ago and have always wondered why it hasn't caught on here. With this recipe, now it will. Quark is actually a fresh cheese - not a yogurt, but does have the consistency of yogurt, but a little thicker, more like a well blended cottage cheese or farmer cheese. One container is 80 calories, no fat, no cholesterol, with 14 grams of protein and 6 grams of sugars. Sweetened with Stevia and erythritol. One note, I'd like to see them list the name of the active cultures on the label.
