Imported from Spain, these are root vegetables - tubers - that are rich in prebiotic fiber and gluten free and nut free. Use as you would ordinary flour but oh, this is so much more nutritious. The flour has a slightly sweet taste, but don't be fooled as no sugar is added. Great for those following Paleo. By the way the real name for tiger nuts is actually C. esculentus - probably why they call them tiger nuts.
