Pizza is a HIT!
A crust of tapioca, sorghum, teff and amaranth mixed with tapioca flour has a great flavor and is thin and crisp. Great recipe! The cheese is a blend of whole milk mozzarella and provolone. Gluten-free, a 1/2 pizza is 330 calories, 13 grams of fat, 12 grams of protein - along with a higher than I'd like 790 mg of sodium. My only complaint is I would like to see a bit more of the tomato sauce. It's a nice touch to add on top diced tomatoes but they didn't add much flavor.
