Everyone loves these pancakes, and not just around the holidays!
Chef Jamie says: Everyone loves these pancakes, and not just around the holidays! They are so hearty and taste really good when served with Gingered Butter (recipe below).
This recipe makes 10-12 pancakes.
Pumpkin Ginger Pancakes Ingredients:1 cup all-purpose flour
1/4 t. salt
2 T. brown sugar
1 t. baking powder
1/2 t. baking soda
1/2 t. cinnamon
1/2 t. nutmeg
1/2 t. ground ginger
1 egg
1/2 cup plain yogurt
3/4 cup milk
3/4 cup canned pumpkin
2 T. butter, melted
Pumpkin Ginger Pancakes Directions:In a medium sized bowl, sift together the flour, salt, sugar, powder, soda, cinnamon, nutmeg and ginger.
In a separate bowl, combine the remaining ingredients. Add the flour mixture to the wet mixture and stir just until blended. (Do not over mix!)
Heat a pancake griddle or frying pan till very hot. (To test the temperature, a drop of water flicked on the pan should jump about.) Grease the surface well, then use about 1/4 cup of batter per pancake.
When the bubbles on the surface of the pancake pop, flip it over to cook on the other side until brown. Serve the pancakes with gingered butter and maple syrup.
Gingered Butter Ingredients:
2 T. candied ginger, finely chopped
1/4 cup softened butter
Gingered Butter Directions:
Beat the ginger and butter together to blend well.
