Yellow Petal Yuan Nan Chicken and Spinach Siu Mai

Dim sum is translated with various interpretations: “a bit of heart”, “heart’s delight”, or “to touch the heart”. A light variety of courses including several types of fried or steamed dumplings are served in succession with tea, anytime from mid-morning to early afternoon, enjoyed with family or friends or as a snack; the Chinese tradition of dim sum is something everyone loves as soon as they try it. Now you can create your own chicken and spinach steamed dim sum dumplings at home, thanks to Chef Golo of Joss Cuisine.
Joss Cuisine/Traditional is the offshoot of Joss/Chinese Haute Cuisine, which was one of Los Angeles' best kept secrets for twenty years. The new boutique restaurant, located in Beverly Hills, continues the culinary style of the original. Joss Cuisine drawing on traditional Chinese recipes, many with herbal elixir ingredients valued for hundreds of years. Joss's signature Hong Kong Pin Pei Chicken, Peking Duck (China's most famous dish) and Dim Sum remain the specialties of the house.
Please note: this recipe calls for Chinese dumpling skins (White Sill Mai Wrapper) which are available in most Chinese markets and also for a wooden steamer basket, available in Chinese markets or online.

About the chef: born in China, Golo Kwokson Yu went to Hong Kong early in his career to get training in Hong Kong style cooking and principally Dim Sum. He is part owner of Joss Cuisine and has been with Joss since 1988. He started as a Dim Sum apprentice and assistant to the renowned Lao Ying Chieh, who retired after passing on her special recipes and unsurpassed methods to her talented protégé. Golo ascended to become Chef de Cuisine in 1993 and oversaw the successful kitchen until it closed in 2006. In 2007, he took extensive food tasting trips and toured all the major culinary capitals of China and came to the conclusion that the most exciting direction for the new restaurant, Joss Cuisine, will be to return to the rich heritage of fine Chinese cuisine.

Yellow Petal Yuan Nan Chicken and Spinach Siu Mai Ingredients:
1 lb organic spinach leaves
4 oz ground lean chicken breast
2 cloves minced fresh garlic
1 teaspoon sesame oil
1 teaspoon coarse sugar
½ teaspoon corn starch
1/3 teaspoon sea salt
Pinch white pepper
White Sill Mai Wrapper (Chinese dumpling skins)

Steal This Recipe® Step by Step Instructions:
Wash spinach leaves, shake off excess water.
Blanch quickly in boiling water.
Drain and mince.
Mince chicken breast.
Toast minced garlic to light golden color.
Mix above eight ingredients to create siu mai filling.
Place single siu mai wrapper on palm, spoon filling onto center, using your other hand, grab corners of wrapper and lift to make a bundle.
Place completed bundles on bamboo steamer basket, making sure to leave space around each one.
Lay steamer basket with siu mai over rim of a pot of boiling water for six minutes.
Ready to serve, add mustard or chili paste to taste.
