From Chef Chris Ennis

Here's one of Chef Christopher Ennis' specialties when he was chef at Vibrato Grill Jazz ...Etc, which is perched on top of Mulholland Drive in Bel Air, California.

The secret ingredient to the flavor in this recipe happens to be America’s favorite morning beverage ... coffee! The steps are easy and there are just a few ingredients, but the results will leave your taste buds buzzing for more!

1 lemon (zested)
1 lime (zested)
1 orange (zested)
1 Tbsp Kona coffee (ground)
2 tsp fresh thyme (chopped)

2 Tbsp olive oil
Salt and pepper

Pre-heat oven to 180 degrees F.
Place the lemon, lime and orange zest on a cookie sheet lined with parchment paper and put in the oven.
Allow zest to dry out until all the moisture is evaporated.
Put zest in a bowl and mix in ground coffee and thyme.
Rub pork chops with coffee zest mixture and salt and pepper.
Heat an oven-proof pan over medium-high heat and add olive oil.
Sear pork chops on both side.
Finish in the oven (at about 350 degrees) for 9 - 10 minutes or until medium well.
