Cool Coffee Fudge

This fudge is a tasty treat with the addition of coffee and sultanas. Sultanas are from green grapes and when dried are a golden color. The best come from Greece, but you can find good choices from Turkey and the U.S. They add a tangy sweetness, but you can certainly substitute the same quantity of chopped walnuts if you like. The fudge is sinfully rich from the condensed milk, have a yummy coffee flavor, and are more like candy than fudge… what could be better?

This recipe makes about 18 pieces.

Cool Coffee Fudge Ingredients:
½ cup (4 ounces) brewed coffee
1 ¾ sticks butter
3 ¾ cups sugar
1 cup (8 ounces) condensed milk
¼ cup chopped sultanas

Directions:
Grease a 6” square pan and set aside. Brew the coffee. Cut up the butter into thick pieces.
Pour the coffee, butter, sugar, and milk into a large saucepan and heat over a low flame, stirring occasionally until it thickens. Your candy thermometer should read 234°F. (One test is to drop a glob of the mixture into cold water; if it forms a soft ball, it’s ready.)
Remove the pan from the heat and set the base of the pan into cold water to speed up the cooling process. The candy thermometer should now read 120°F.
With a wooden spoon beat the fudge mixture until it thickens so much it can barely pour from the pan. 
Add the sultanas and mix quickly then pour into the greased pan and allow to set.
Cut into squares and serve.
