Yummy and low-calorie!

This is so yummy and so low in calories! You'll love it! 
Feel free to experiment with other fruit flavorings and the moment's freshest fruits like nectarines, peaches, or raspberries. 
One more reason to hop down to the local farmer's market!

Cool Pineapple Coconut Coffee Ingredients: 
1 cup freshly brewed regular blend coffee, cooled 
1 cup freshly cut pineapple (or four slices of canned) 
1/2 cup low-fat coconut milk (Find in Asian foods area of most supermarkets) 
1 teaspoon pure vanilla extract or sugar-free vanilla syrup

Directions: 
Chill tumbler in the freezer until ready to serve. 
Pare and cut fresh pineapple. 
Put all the ingredients in a blender and blend into a pulp; add 6-8 ice cubes and blend until the ice is crushed. 
Serve in a chilled tumbler.

Makes 2 servings and easily doubles.
